Recipe Ingredients for Whole Wheat Chocolate Chip Walnut Zucchini Bread

3/4 cup brown sugar
1 tablespoon olive oil
2 tablespoons canola oil
2 large eggs
1 teaspoon vanilla
1 cup apple sauce
2 cups whole wheat flour
1 1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 cups shredded zucchini
1/2 cup dark chocolate chips
1/2 cup walnut pieces

Recipe Directions for Whole Wheat Chocolate Chip Walnut Zucchini Bread

  1. Preheat oven to 350.

  2. Spray loaf pan with olive oil.

  3. Place first four ingredients in large bowl and mix at low speed until well blended.

  4. Stir in applesauce.

  5. Combine flour, baking soda, cinnamon and salt.

  6. Mix with a whisk.

  7. Add flour mixture to wet mix, beating until moist.

  8. Stir in zucchini, chocolate chips and walnuts.

  9. Spoon batter into loaf pan and bake for 55 minutes.

  10. Be careful not to overcook the loaf.
