Adapted from America's Test Kitchen. NOTE: For buttermilk substitute, pour 1 tbsp white vinegar or lemon juice into measuring cup, then add whole milk until the mixture hits the 1 cup mark. Repeat as needed.

Recipe Ingredients for Whole Wheat Chocolate Chip Pancakes

1 cup flour
1 cup whole wheat flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
3 tbsp unsalted butter, melted
2 cups buttermilk
1 cup chocolate chips

Recipe Directions for Whole Wheat Chocolate Chip Pancakes

  1. Combine flours, sugar, baking soda, baking powder, and salt in a large bowl.

  2. In another bowl, first combine egg and butter, then whisk in buttermilk.

  3. Make a well in the center of the dry ingredients and gently pour the wet mixture in.

  4. Mix LIGHTLY and CAREFULLY until JUST COMBINED. Do not overmix! This will give you tough, chewy, dry pancakes. There should be some lumps left when you're done.

  5. Coat a griddle with PAM and heat until white smoke begins to rise.

  6. Portion out each pancake on the griddle, about 1/4 cup each.

  7. Drop some chocolate chips into each pancake as it's cooking.

  8. Flip over when the pancakes begin to bubble on top.

  9. Cook until an even, golden brown on both sides.

  10. Enjoy!!
