Chicken pot pie using whole wheat flour and nonfat milk as a base. You can add a pastry to the top if you like.

Recipe Ingredients for Whole Wheat Chicken Pot Pie

2 chicken breast
2 tbsp salt
2 tbsp pepper
2 tbsp canola oil
1/2 cup Smart Balance Light
3/4 cup whole-wheat flour
1 quart nonfat milk
2 tbsp chicken bouillon
2 tbsp minced garlic
1/2 small onion, minced
1 cup green peas, frozen
1 cup carrots, chopped
2 tbsp onion powder

Recipe Directions for Whole Wheat Chicken Pot Pie

  1. Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. Alternatively, you may use precooked chicken.

  2. In a large saucepan, melt butter and then slowly add flour, stirring until consistency of peanut butter, but not brown like a roux. Slowly add milk and keep stirring. Add chicken bouillon, garlic, onion powder and onion and stir until thickened. Add peas, carrots, and cut up chicken. Heat until cooked. Remove from heat and serve.

  3. Optional puff pastry top: Cut each sheet of frozen puff pastry into 1in strips, 8 ins long. Weave strips into a lattice. Bruch beaten egg wash on top. Bake for 5 minutes at 350 degrees or until dough has slightly risen. Set aside until ready to assemble the pies. Put pie filling in oven-proof bowls and top with puff pastry. Bake for 5 minutes or until bubbly.
