They are incredibly addictive, yet still very healthy. This recipe doesn?t call for any oil or butter, but the applesauce, yogurt, and grated carrot keep the muffins moist and tender. These are the perfect accompaniment to a cup of morning coffee or tea, and they make a healthy lunchbox or after school snack.

Recipe Ingredients for whole wheat carrot raisin muffins

6 serving Flour
1 Teaspoon Baking Powder
1 teaspoon Baking Soda
0.25 tsp Salt, Table
1 tsp Cinnamon, Ground
0.25 tsp Nutmeg, Ground
0.25 serving Ground Ginger Spice
0.5 cup Honey, Strained Or Extracted
6 oz Vanilla Yogurt
0.33 cup Applesauce, 100% Natural Style
1 tsp Vanilla Extract
1 large Egg, White
1 cup, chopped Carrots
0.5 cup, chopped Carrots
0.5 cup Chopped Walnuts
1/2 cup (not packed) Raisins, Seedless

Recipe Directions for whole wheat carrot raisin muffins

  1. Preheat oven to 400 degrees F.

  2. Sift together dry ingredients (whole wheat flour, baking powder, soda, salt, cinnamon, nutmeg) into a mixing bowl.

  3. Whisk egg, honey, yogurt, applesauce, and vanilla together in a separate mixing bowl.

  4. Fold dry ingredients into wet ingredients until just combined. Stir in raisins and walnuts, being careful not to over-mix.

  5. Divide equally among 12 paper-lined muffin cups. Bake for 15 minutes.
