Carrot Muffins made with white, wheat & soy flours.

Recipe Ingredients for Whole Wheat Carrot Muffins

1 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup soy flour
1/3 cup sugar
1 tbls baking powder
1/2 tsp salt
1 tsp pumpkin pie spice
1/3 cup evaporated milk
2/3 cup water
1/3 cup canola oil
1 large egg
1 tsp vanilla
1 cup shredded carrots

Recipe Directions for Whole Wheat Carrot Muffins

  1. Preheat oven to 400 degrees. Line muffin tins with cupcake foils.

  2. Combine flour, sugar, baking powder, salt and spice in a medium bowl; mix well.

  3. Combine milk, water, oil, egg, vanilla and carrots in a small bowl; mix well.

  4. Add milk mixture to flour mixture all at once. Stir until just combined, being careful not to overmix.

  5. Divide batter evenly among muffin cups. Bake until golden, 15-18 minutes. Remove from pan, and cool on wire racks. Can be frozen.
