Recipe Ingredients for Whole Wheat Carrot Cake Muffin

1 1/2 c whole wheat pastry flour
1/4 c brown sugar
1/4 c chopped walnuts
1/2 c raisins
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 c unsweetened apple sauce
1 c shredded carrot
1/2 banana

Recipe Directions for Whole Wheat Carrot Cake Muffin

  1. Preheat oven to 350.Mix the dry in one bowl. Wet in another. and then combine.Stir gently until combined. Will be quite a wet batter due to applesauce.

  2. Bake 25 minutes.
