Recipe Ingredients for whole wheat carrot bars

2 c. whole wheat flour
1/2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 tbsp. grated orange rind
1 c. sugar
1 egg
2 tbsp. oil
1 c. applesauce
1 1/2 tbsp. orange extract
1 tbsp. vanilla
1 large carrot (grated)
1 tsp. coconut extract (opt.)

Recipe Directions for whole wheat carrot bars

  1. Mix sugar with dry ingredients.

  2. Mix liquid ingredients, including applesauce. Combine.

  3. Fold in grated carrot.

  4. Bake in 9"x9" or 7"x11" pan sprayed with non-stick cooking spray at 350 degrees for 25 to 30 minutes.

  5. Cut in squares.
