Recipe Ingredients for Whole-Wheat Buttermilk Pancakes

2 cups whole wheat flour
1 cup flour
1/2 cup sugar
1/2 cup oil
6 eggs
2 teaspoons baking soda
1/4 teaspoon salt
4 cups buttermilk

Recipe Directions for Whole-Wheat Buttermilk Pancakes

  1. Mix dry ingredients.

  2. Add buttermilk and stir by hand.

  3. Add oil and stir by hand.

  4. Add egg yolks only - leave egg whites in a small mixing bowl.

  5. Stir in yolks by hand.

  6. Whip up egg whites until bubbly on top.

  7. Fold in egg whites.

  8. Cook pancakes on a hot griddle with cooking spray until golden brown on each side.
