Recipe Ingredients for Whole Wheat Bread from Your Food and You

1/2 oz Active dry yeast
4 oz warm water
1 3/10 oz olive oil
1/2 oz salt
14 oz warm water
21 oz whole wheat flour
10 1/2 oz white flour
1 1/5 oz honey

Recipe Directions for Whole Wheat Bread from Your Food and You

  1. * Dissolve yeast in warm water

  2. * Combine sugar, oil, salt and boiling water

  3. * Stir to dissolve sugar

  4. * Add 0.75 cup cold water

  5. * When mixture is lukewarm, stir in the dissolved yeast

  6. * Mix flours together reserving 1/2 cup ~ 1 cup = 2.5~5oz = 71~142g white flour to add while kneading

  7. * Add flours gradually to form a stiff dough

  8. * Turn out on a ligtly floured board and knead until dough is smooth and elastic (about 7 to 10 minutes)

  9. * Place in oiled bowl, turn and cover

  10. * Let rise in a warm place (85o to 90o F or 30o to 32o C) until light and double in bulk for about two hours

  11. * Punch down

  12. * Divide into half; shape into loaves and place in greased loaf pans.

  13. * Cover and let rise in a warm place until nearly double (about 30 minutes)

  14. * Bake at 350oF for from 50 to 60 minutes

  15. * Remove from pans immediately and brush with oil

  16. * Let cool on rack

  17. * Yield: 2 Loaves
