Recipe Ingredients for Whole Wheat Bread

2 1/2 cups bread flour
1 cup whole wheat flour
1 teaspoon salt
2 1/2 teaspoon yeast
4 tablespoons salted butter
1 cup 2 % milk
3 teaspoons sugar

Recipe Directions for Whole Wheat Bread

In mixer add 2 cups bread flour and 1 cup whole wheat flour. Proof your yeast in 1/4 cup warm water and 1/2 teaspoon sugar. Melt butter in a large cup or jar. Add your milk to this and stirr if still quite cold put in the microwave oven for 15 seconds on high and stirr check to see if luke warm, if it is then add this to the flour along with the yeast mixture and turn on the mixer to a low setting untill all the liquids and flour are mixed well, if the dough is not pulling away from the sides of the bowl then add white flour 1/4 cup at a time untill the dough does not stick to the sides and bottom of the bowl. Turn off the mixer and pull dough off the dough hook if it sticks to your hand at this point then you may want to incorporate a little more flour, it should be smooth and elastic not sticky. You can do this without the mixer by adding just a little of the flour to a cutting board and kneeding the bread in the flour until it is no longer sticky. Roll the dough into a ball and put the ball into a bowl that you have poured about a tablespoon of vegetable oil in, turn the ball of dough over to coat the other side with the oil. Cover the bowl with a damp dish towel or a piece of plastic wrap, and let rise until double. Punch down and flatten out until about an 1/2 inch thick, this is to push out all the air pockets. Fold over in half and then start from one end and roll up tight, turn the ends under and pinch together the seam on the bottom. Place this into a loaf pan and cover again. Let rise until about 1" over the top. Place this into preheated over of 375 degree oven for 30 minutes or when tapped on top sounds holow. After that take a stick of butter and rub over the top while hot, this will soften the crust. Other wise if you like it crunchie leave it alone. Enjoy with sandwiches or what ever recipe you would like to use it in.
