Recipe Ingredients for Whole Wheat Bread I

1 cup Organic Reduced Fat Milk 2% Milkfat
1 oz Yeast
1 cup Potatoes, Mashed, Home-prepared, Whole Milk And Butter Added
0.13 cup Sugars, Granulated
2 tsp Salt, Table
4 tablespoon Kretschmer Wheat Germ, Regular
1 cup Whole Wheat Flour
1 cup Whole Grain Oat Flour
3 cup Gold Medal Better for Bread Flour
8 oz Water

Recipe Directions for Whole Wheat Bread I

  1. Heat 1/2 cup water to 105 degrees, add yeast and let stand 10 minutes to proof. Meanwhile, mix 1/2 cup water, milk, sugar, salt, and potatoes in stand mixer. Add proofed yeast and mix on low speed. Continue adding flour, a little at a time, and when all is mixed knead for about 15 minutes. Flour amount may vary--add more to make dough smooth and elastic. It will be a little soft.

  2. Grease a large bowl, but the ball of dough in and turn it over. Let rise, knead again, and let rise again. Shape into desired shape, let rise 20 minutes or so.

  3. Bake at 350 degrees until loaves sound hollow when tapped.
