Recipe Ingredients for Whole Wheat Bread

1 1/3 cups water, 110F
1 1/2 tbsp active dry yeast
1/4 cup honey
4 tbsp unsalted butter, melted
2 1/2 tsp salt
7/8 oz. rye flour
1/2 cup flax seed meal
16 1/2 oz. whole wheat flour
13 3/4 oz. unbleached all-purpose flour

Recipe Directions for Whole Wheat Bread

  1. Combine water, yeast, honey, butter and salt in a bowl. Mix in rye flour, flax seed, and 1 cup each of whole-wheat flour and all-purpose flour.

  2. Add the remaining flours and mix until there is no more dry flour. Knead for 8 minutes.

  3. Transfer to a lightly oiled bowl; cover with plastic wrap. Allow to rise until doubled, about an hour.

  4. Heat oven to 375F, Divide dough into 2 pieces. shape into loaves and place in lightly oiled 9 x 5-inch loaf pans. Let rise until almost doubled, 20 - 30 minutes.

  5. Bake until instant read thermometer reads 205F when inserted into short end of loaf. Transfer to wire rack to cool.
