This bread uses a sponge. When adding the last addition of flour, add enough to make a soft, but satisfying dough ball. Enjoy kneading. It's cathartic.

Recipe Ingredients for Whole Wheat Bread

1 cup water
1 tbsp yeast
1 cup milk
1/4 cup shortening
1/3 cup honey
1 tbsp salt
2 eggs
6 cups whole wheat flour
1 cup rolled oats
1/2 cup sunflower seeds
1/2 cup walnuts, chopped

Recipe Directions for Whole Wheat Bread

  1. Dissolve yeast in warm water with 1/2 tsp sugar

  2. Add milk, shortening, honey salt and eggs.

  3. Beat in 3 cups of flour.

  4. Place sponge in a warm place for 1 hour.

  5. Stir in flour to make a good dough.

  6. Knead.

  7. Let rise until doubled.

  8. Punch down and shape into loaves.

  9. Allow to rise.

  10. Bake at 350 for 40 minutes to 1 hour
