Recipe Ingredients for Whole Wheat Bread

100 g wholewheat flour
300 g bread flour
300 g water
10 g salt
1 g instant yeast

Recipe Directions for Whole Wheat Bread

  1. Add dry ingredients to a large bowl and mix well.

  2. Stir in water and mix until all ingredients are Incorporated.

  3. Cover bowl with plastic wrap and let sit in a cool place for 13 to 18 hours. In a very cool room let stand for up to 24 hours.

  4. Remove from bowl onto a floured surface.

  5. Form into a boule and place it on a well floured or use bran tea towel.

  6. Cover top with bran or corn meal.

  7. Cover with the tea towel and let rise in a cool spot for 2 to 3 hours.

  8. 40 minutes before the end of the second rise preheat oven amd covered dutch oven to 475 deg.

  9. Turn boule into the dutch oven and bake for 30 minutes with the lid on.

  10. Remove the lid and bake for another 10 to 15 minutes.

  11. Remove from oven and place the bread on a wire rack to cool.
