Recipe Ingredients for whole wheat bread

2 3/4 cup whole wheat flour
2 1/2 cup bread flour
1/3 cup dry milk
1/3 cup wheat gluten flour
1/3 cup sugar
1 tsp salt
1 tablespoon yeast
2 eggs
1 1/2 cup water

Recipe Directions for whole wheat bread

  1. activate yeast in 1 1/2 cup warm water

  2. mix first 6 ingredients or use 5-6 cups of mix

  3. beat 2 eggs add to yeast

  4. add five cups of dry ingredients and mix well let rest 2 min

  5. knead bread adding additional dry ingredients as needed for 10 min

  6. place n greased bowl in warm place to rise for one hour

  7. punch down and let rest for 10 min

  8. while dough is resting prepare baking sheets (this can be made as french loaves or as regular bread in loaf pan prepare what you need)

  9. divide dough in half, roll out to 10 x 3 inch rectangle and roll tightly from one long edge pinch to close seam make 3-5 diagonal slashes with a sharp knife and brush with water (or form in to loaf and place in pan)

  10. let rise about one hour

  11. place pan of water in oven and preheat to 375 when dough has risen place in center of the oven and bake for about 30 minutes
