Blueberry Wheat Scones! You can use any fruit (besides banana, they?re too mushy) you?d like for this. The cooked sweet blueberries are delicious though, it?s like having jam baked right in!

Recipe Ingredients for Whole wheat Blueberry Scones(3pp each)

1/3 cup Splenda
1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon lemon rind
3 tablespoons butter
6 oz Total 0% Plain Greek Yogurt
3 fresh egg whites
3/4 cup fresh blueberries

Recipe Directions for Whole wheat Blueberry Scones(3pp each)

  1. Blueberry Wheat Scones!

  2. 1/3 cup Splenda

  3. 1.5 cups whole wheat flour

  4. 1/2 teaspoon baking soda

  5. 1 teaspoon baking powder

  6. 1/4 teaspoon salt

  7. 1 teaspoon lemon rind

  8. 3 Tablespoons land o lakes light butter, melted or softened

  9. 6 oz (1 container) plain non-fat Greek yogurt (should be 100 calories worth)

  10. 3 fresh egg whites

  11. 3/4 cup fresh blueberries

  12. 1.- mix everything besides blueberries together with a fork until it forms a sticky dough

  13. 2.- heat oven to 375*, add blueberries and mix gently

  14. 3.- line a pan with tinfoil (or spray with nonstick spray), divide batter into 12 even portions, give them about an inch of space on the pan

  15. 4.- I like to sprinkle the top with sugar, you?ll need about 2 Teaspoons (an extra 3 calories and totally worth it!)

  16. 5.- bake for 12-15 minutes or until cooked through, let cool and enjoy!
