Hearty blueberry pancakes that aren't soggy, taste sweet in and of themselves, great source of fiber.

Recipe Ingredients for Whole Wheat Blueberry Pancakes

1 Apple Apples
1 3/10 cup Whole Wheat Flour
3 tsp Sugar in the Raw
1/2 cup, unthawed Blueberries
2 tbsp Brown FlaxSeed Meal
1/2 cup Organic Reduced Fat Milk 2% Milkfat
1 large Egg, Whole
2 tbsp Vegetable Oil, Canola

Recipe Directions for Whole Wheat Blueberry Pancakes

  1. Grate the apple into the rest of the ingredients EXCEPT the oil. Mix thoroughly.

  2. Use oil (1 Tbsp or so at a time) in a non stick frying pan or skillet. Scoop out batter and flatten if need be. It will be pretty thick. Cook until it seems firm on the bottom -- then flip. Test the inside of the pancakes to see if they are cooked through, then remove from heat. I serve these with a little peanut butter and a little powdered sugar.
