A cute and healthy hybrid of baking! It's not sweet-sweet, but it's sweet enough for my taste buds. I see it as a quick breakfast/snack more than a dessert, but it's still a treat! Recipe Ingredients for Whole Wheat Blueberry Oat Scuffin

1 1/2 cups whole wheat flour
3/4 cup Oats, Rolled, Regular Old Fashioned
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg, beaten
3/4 cup fat free milk
1/2 cup brown sugar
1/4 cup canola oil
1/2 teaspoon vanilla
1 tsp cinnamon
1 cup blueberries

Recipe Directions for Whole Wheat Blueberry Oat Scuffin

  1. Preheat the oven to 400 degrees fahrenheit.

  2. Grease or paper cup line a 12 regular sized muffin tin.

  3. Stir the flour, oats, baking powder, baking soda, salt, and cinnamon in a mixing bowl. Sift if necessary. Make a well in the center (for the wet ingredients).

  4. Mix the egg, milk, sugar, oil, and vanilla in a separate bowl.

  5. Add the wet to dry and combine, but DON'T OVER MIX!

  6. Fold in the blueberries.

  7. Fill each muffin tin 3/4 full, or just evenly.

  8. Bake for 16 minutes. Cool in the oven for 10 minutes. Cool out of the oven for 10 minutes.
