Whole wheat blueberry muffins with honey and wheat germ.

Recipe Ingredients for Whole Wheat Blueberry Muffins

1 Egg
3/4 c Skim milk
1 c Whole Wheat flour
1/2 c Wheat bran or Wheat germ
1/2 c Unbleached All-purpose flour
1/3 c Honey
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 cup Frozen Blueberries (tossed in flour to coat)

Recipe Directions for Whole Wheat Blueberry Muffins

Combine dry ingredients; set aside. Beat egg slightly. Add milk (may use sour milk or buttermilk if desired). Add 1/4 cup "Lighter Bake" fruit puree and honey. Toss blueberries with 2 tsp of dry ingredients. Add egg mixture to dry ingredients and mix lightly with spoon. Fold in blueberries. Pour into greased or paper-lined muffin tins. Bake 15-20 minutes at 400 degrees. Cool slightly before removing from pans. Store in covered container.
