I got this recipe from Sara Foster's cookbook and changed it to be whole wheat flour instead of all-purpose flour!

Recipe Ingredients for Whole Wheat Blueberry Muffins

3 cups of whole wheat flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
8 tablespoons (1 stick) unsalted butter, melted
3 large eggs
3/4 cup skim milk
2 1/2 cups of frozen blueberries

Recipe Directions for Whole Wheat Blueberry Muffins

  1. Preheat oven to 375 degrees.

  2. Line 12 large muffin cups (I didn?t have large muffin cups, I suppose, because I could have made 24 muffins out of the amount of batter this yielded).

  3. Combine the dry ingredients in a separate bowl: flour, sugar, baking powder, salt, cinnamon.

  4. Whisk together the wet ingredients in another separate bowl: butter, eggs, milk, lemon zest, lemon juice.

  5. Add 1 cup of blueberries (I used frozen) to the wet mixture.

  6. Combine the wet and dry mixtures by either stirring together or mixing on very low speed in the mixer with the paddle attachment.

  7. Stir in the last 1 + 1/2 cups of blueberries.

  8. Scoop the batter into the cupcake liners.

  9. Bake 25 to 30 minutes, until lightly golden brown and if you press down on the muffin, it springs back.
