Blueberry muffins made with whole wheat flour. Hearty and yummy! Granulated sugar can be substituted for the raw sugar.

Recipe Ingredients for Whole Wheat Blueberry Muffins

1 egg
1/2 cup skim milk
1/4 cup oil
3/4 cup whole wheat flour
3/4 cup flour
1/3 cup raw sugar
2 tsp baking powder
1/2 tsp salt
1 cup blueberries

Recipe Directions for Whole Wheat Blueberry Muffins

  1. Preheat oven to 400 degrees.

  2. Beat egg; stir in oil and milk.

  3. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.

  4. Fill muffin cups 2/3 full.

  5. Bake at 400 degrees for 20-25 minutes or until golden brown. Immediately remove from pan. (Grease bottoms of muffin pans if cupcake paper isn't used.)
