Recipe Ingredients for Whole-wheat blueberry muffins

1 3/4 cup whole wheat pastry flour
1/2 cup sugar
2 tsp baking powder
3/4 tsp salt
1 tsp lemon zest
1 egg
1/2 cup milk
5 tbsp butter
1 1/2 cup blueberries

Recipe Directions for Whole-wheat blueberry muffins

  1. Preheat oven to 375F.

  2. Mix dry ingredients. Mix wet ingredients, except blueberries. Stir gently to mix. Batter will be dense. Fold in blueberries.

  3. Put in buttered muffin tins.

  4. Sprinkle evenly with 1 tsp sugar/1/4 tsp cinnamon.

  5. Bake about 20 minutes, until wooden pick comes out clean. Cool in pan 5 minutes, then turn onto rack to cool completely.
