Recipe Ingredients for whole wheat blueberry breakfast muffins

1 cup whole wheat flour
2 tbl wheat germ, preferably raw
2 tbl bran, preferably oat
1/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup olive oil
1/4 cup honey
1 egg
1/2 cup milk
1 cup zucchini, grated
1/4 cup sunflower seed, preferably raw
1/2 cup fresh blueberries

Recipe Directions for whole wheat blueberry breakfast muffins

  1. Combine the dry ingredients in a large bowl. In a smaller bowl, combine oil, honey, egg and milk; whisk smooth.

  2. Add liquid to dry ingredients in large bowl. Stir in grated zucchini and sunflower seeds. Fold in blueberries.

  3. Fill greased or lined muffin cups 2/3 full. Bake at 325 for 25 to 30 minutes. Makes 10 to 12 (but 10 is better) regular size muffins.
