Recipe Ingredients for Whole Wheat Blackberry Snack Cake

1 cup Whole Wheat Flour
1 1/2 cup All Purpose Flour
1.33 cup, packed Sugars, Brown
2 tsp Baking Powder
1/2 tsp Baking Soda
1 dash Salt, Table
1 large Egg, Whole
1 cup Organic Fat Free Milk
0.33 cup Vegetable Oil, Canola
0.33 cup Apple Sauce Unsweetened Organics
2 tsp Vanilla Extract
2 cup Blackberries

Recipe Directions for Whole Wheat Blackberry Snack Cake

  1. Preheat the oven to 375.

  2. In a large bowl combine the first six ingredients. In another bowl, combine the egg, milk, oil, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in blackberries.

  3. Pour into a prepared 13x9 baking pan. Bake for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack.
