A healthy treat to use up your over-ripe bananas

Recipe Ingredients for Whole-Wheat Banana-Strawberry Muffins

2 eggs
1/2 c. plain yogurt
1/4 c. applesauce
3/4 c. brown sugar
1 tsp vanilla
3 bananas
2 c. whole wheat flour
1 tsp baking soda
1/2 T. cinnamon
1 c. sliced strawberries

Recipe Directions for Whole-Wheat Banana-Strawberry Muffins

  1. Preheat the oven to 375 Degrees F. Grease 12 large muffin cups

  2. In a large bowl, whisk together the eggs, yogurt, applesauce, brown sugar, vanilla and bananas. combine the flour, baking soda and cinnamon; stir into the banana mixture until moistened. Fold in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled.

  3. Bake for 20 minutes in the preheated oven or until the tops of the muffins spring back when pressed lightly. Cool 10 minutes and remove from pan.
