whole wheat pancakes with applesauce substituted for oil and homemade vanilla soy milk buttermilk (by adding vinegar to the milk)

Recipe Ingredients for Whole Wheat and Banana Pancakes

1/3 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup quick oats
1/4 teaspoon baking soda
1 tsp baking powder
1/4 cup egg beaters
1 tbsp unsweetened applesauce
1 cup light vanilla soy milk, mixed with 1 tbsp white vinegar
1/4 tsp salt
1 large banana, mashed
1 tsp cinnamon

Recipe Directions for Whole Wheat and Banana Pancakes

  1. 1. Mix the soy milk and vinegar and set aside.

  2. 2. Preheat skillet to med-high heat (350-375 degrees)

  3. 3. Whisk together all dry ingredients.

  4. 4. In a separate bowl, whisk together wet ingredients (minus mashed banana). Fold in mashed banana. Let the batter stand for 5 minutes.

  5. 5. Measure out 1/4 cup of batter and pour onto skillet. Cook until bubbles form and the edges are dry, about 2 minutes. Flip and cook until browned on the other side.
