This recipe I got from cooks.com and adapted to make lower fat, by replacing half the oil w/ applesauce. I also added the nuts.

Recipe Ingredients for WHOLE WHEAT BANANA MUFFINS (LIGHT)

2 egg whites
1 c. skim milk
1/4 c. vegetable oil
1/4 c. applesauce
1/4 c. maple syrup (or honey)
3/4 c. banana, mashed
2 c. whole wheat flour
3 tsp. baking powder
1/4 tsp. nutmeg
1 tsp. cinnamon
1/4 c. walnuts, corsely chopped
1/4 c. pecans, corsely chopped

Recipe Directions for WHOLE WHEAT BANANA MUFFINS (LIGHT)

Preheat oven to 400 degrees. Beat egg whites, then combine with milk, oil, maple syrup, and banana. Mix in remaining ingredients until just moistened (batter should be lumpy). Fill muffin cups full and bake 20-25 minutes. Makes 12 muffins.
