Recipe Ingredients for Whole Wheat Banana Chip Muffins

1 cup All-Purpose Flour, Unenriched
1 cup Whole Wheat Flour
3/4 cup Brown Sugar
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1/2 teaspoon salt
1 Egg
1/2 cup Extra Virgin Olive Oil
1/2 cup Yogurt
1 teaspoon Vanilla
1 cup Bananas, Mashed
3/4 cup dark chocolate, cut into chunks

Recipe Directions for Whole Wheat Banana Chip Muffins

  1. Preheat oven to 350 degrees Farenheit.

  2. Mix Flours, Salt, Baking Soda, Baking Powder in a medium bowl.

  3. Blend sugar, Bananas, and all wet ingredients until smooth.

  4. Slowly blend dry mixture into wet.

  5. Fold Chocolate into mixture.

  6. Spray muffin tins with cooking spray and fill muffin cups 2/3 full.

  7. Bake for 22 to 25 minutes

  8. Allow to cool 5 minutes and then romove from tins.
