Inspired by this recipe: http://www.lovefoodeat.com/whole-wheat-banana-carrot-muffins/ Delicious. I used carrot pulp from juicer. I added 1/2 tsp orange flavouring, plus powdered ginger, as well as the cinnamon in the recipe. I cut the brown sugar and the olive oil in half and substituted 1/4 cup splenda for the rest of the sugar, and 1/2 cup apple sauce for the rest of the olive oil, and it turned out very well. Interesting that there are no eggs in the recipe.

Recipe Ingredients for whole wheat banana carrot muffins

2 cups whole wheat flour
2 cups grated carrot
1/2 cup almonds roughly chopped
1/4 cup quick cooking oats
1/4 cup raisins
1 tsp baking soda
1 tsp cinnamon powder
1 Wet
2 ripe bananas mashed into a paste
1/4 cup olive oil
1/2 cup apple sauce
1/2 cup yogurt
1/2 cup brown sugar
1/4 cup Splenda
1

Recipe Directions for whole wheat banana carrot muffins

Combine the wet ingredients and mix well. Combine dry ingredients and mix well, then stir into the wet ingredients until all are lightly mixed. Spoon into well greased muffin tin. I started oven at 400 and turned down to 350 - bake for 30 minutes - use toothpick to check that muffins are done.
