Because of the barley and flaxseed, this banana bread is extremely flavorful.

Recipe Ingredients for Whole Wheat Banana Bread

3/4 cup wheat flour
1/2 cup barley flour
1/4 cup flaxseed, ground
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. cinnamon
1/8 tsp. salt
1 egg
1 cup bananas (3 medium), mashed
3/4 cup sugar
1/4 cup coconut oil

Recipe Directions for Whole Wheat Banana Bread

  1. Grease bottom and sides of an 8x4x2-inch loaf pan and set it aside.

  2. In a medium bowl combine all dry ingredients. Make a well in the center of dry mixture and then set aside.

  3. In another bowl combine all the wet ingredients. Then add the wet mixture all at once to the dry mixture. Stir just until moistened (batter should be lumpy).

  4. Spoon the batter into the prepared pan. Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on wire rack for 10 minutes. Then remove the loaf from the pan and cool on the wire rack.
