Recipe from "Muffins & Quick Breads" - Williams-Sonoma Kitchen Library, by John P. Carroll. This makes just one loaf. Original recipe has doubled these ingredients to make two loaves. TRIED. GOOD. Optionally add 1/2 cup of walnuts or pecans prior to adding the dry ingredients. We added some "Craisens" to our batter in place of the nuts to add some color & a different taste.

Recipe Ingredients for Whole Wheat Banana Bread

1 1/4 c Whole wheat flour
1 t baking soda
1/2 t salt
1/2 c butter, unsalted
1 c sugar
2 bananas, large, mashed
2 eggs

Recipe Directions for Whole Wheat Banana Bread

  1. Preheat oven to 350 degF. Grease and flour 2 medium (8-1/2") loaf pans.

  2. In a medium bowl stir and toss together the flour, baking soda and salt. Set aside. In a large bowl beat together the butter and sugar until blended; a hand-held mixer is best for this step. Beat in the bananas, then beat in the eggs until completely mixed; don't worry if the mixture looks curdled -- this is only because of the moisture in the mixture, and is not a flaw. Add the combined dry ingredients and stir just until blended.

  3. Spread evenly in the 2 prepared pans. Bake until a thin wooden skewer inserted in the center of a loaf comes out clean, about 55~65 minutes. Cool in the pan for 10 minutes, then tourn out onto a wire rack to cool completely.
