Recipe Ingredients for whole wheat banana bread

4 medium bananas
3/4 cup sugar
1/8 cup molasses
2 medium eggs
1 tsp vanilla extract
1/4 cup canola oil
1/2 cup yogurt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp powdered ginger
2 1/4 cups white whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda

Recipe Directions for whole wheat banana bread

  1. the riper the bananas the better.

  2. use only white whole wheat flour or whole wheat pastry flour, regular whole wheat flour is too heavy

  3. mash bannas well, until like baby food, combine molasses and sugar until it remembles dark brown sugar, add to bannana with rest of wet ingredients and beat well. I prefer to use Dannon Naturals Vanilla yogurt, which the system won't recognize for some reason. Any good plain or vanilla low fat yogurt will work. Drain off any whey if it is on top.

  4. combine dry ingredients in separate bowl, add to wet ingredients cominfing just until mixed.

  5. bake in a large loaf ban for 60 -75 minutes at 350. allow to cool complelety before cutting. After about 45 minutes or so, do a knife test every 10-15 minutes. Make sure to use a very large loaf pan, or it may spill over the side.

  6. If you are vegan you can try soy yogurt,. I've never tried it, so I'm not sure how it would taste, though I'd be intersted to find out. Other wise you can leave out the yogurt and increase the canola oil, or any light tasteing oil that has no sat fat, and is relatively healthy and can tolerate high temperatures
