Whole Wheat Banana Bread made with olive oil, yogurt, flax seeds and pecans

Recipe Ingredients for Whole Wheat Banana Bread w/flax seeds

6 bananas
1 1/2 c. sugar
1/3 c. olive oil
1/2 c. yogurt, nonfat plain
4 eggs
4 c. whole wheat flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. salt
1/2 c. flax seeds, ground
1 c. pecans, chopped

Recipe Directions for Whole Wheat Banana Bread w/flax seeds

  1. Mix bananas and sugar. Let sit for 10 minutes. Add olive oil, yogurt and eggs and mix well. Add dry ingredients & mix until combined. Add flax seed and pecans and mix until combined.

  2. Spray the insides of 4 - 7" loaf pans. Pour the batter into the four pans. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Each loaf makes 7 - 1" slices.
