My version of a good and healthy Baguette. I love these!

Recipe Ingredients for Whole Wheat Baguette

1 1/2 tbsp sugar
1 tsp salt
2 tsp baking powder
1 tbsp yeast
3 tbsp olive oil
2 tbsp milled flaxseed
4 cups whole wheat flour
1/2 cup white flour
1/2 cup white cornmeal

Recipe Directions for Whole Wheat Baguette

  1. Shift 3 cups of whole wheat flour, 1/2 cup of white flour, and 1/2 cup of white cornmeal together.

  2. Add 2 tbsp of milled (ground) flaxseed, 1 tsp salt, 2 tsp of baking powder, 1 and 1/2 tbsp of sugar, and 3 tbsp of oil to the flour. Do not mix yet!

  3. Put 1 tbsp of yeast into about a cup of warm water. Meanwhile, have another cup of warm water set aside.

  4. Once the yeast is set, pour the yeast into the flour blend and mix. When the dough is dry again, slowly add about 1/2 of the set aside cup of warm water. Mix.

  5. If dough seems bread-ready, do not add anymore water! Just knead in the last cup of flour. If not, keep adding water until the dough is somewhat stick still, then continue onto kneading. (I had to use about 2 cups even, but baking is different for all.)

  6. Knead in the last cup of whole wheat flour to make a four-cup total.

  7. Cover the dough, in a bowl, and let rise for at least two and one half hours.

  8. Make a "snake-like" tube of dough, about 2 inches in height and four inches in width. (Like a baguette, I suppose.)

  9. Cut the "snake" in half.

  10. Lay both halves on a baking sheet, a small distance apart to avoid running into each other and sticking.

  11. Cover and let rise for another hour to an hour and a half.

  12. Bake on 450 degrees for about ten minutes, brush with a beaten egg white, and lower temp to 350 degrees. Bake until crust is crispy, and bread seems done. (I suck at timing. I just guess.)

  13. Let the bread cool off, and enjoy!
