Small but filling, easiest to make in food processor or large mixer.

Recipe Ingredients for Whole Wheat Bagels

4 cups whole wheat flour
2 cups water, warm
4 1/2 tsp yeast
3 tsp salt
3 tbsp honey
1/2 cup wheat germ
1/2 cup sunflower seeds
1/2 cup sesame seeds

Recipe Directions for Whole Wheat Bagels

Proof yeast in warm water. Add salt and honey, then dry ingredients. In mixer or food processor, stir on low until combined, then knead on medium low for 5 minutes or until dough looks smooth and elastic. Allow to rise in covered, oiled bowl for 40 minutes. On floured board, knead briefly to let out extra air and cut into 16 pieces. Roll each piece into a ball and shape into bagel. Allow to rise on floured surface, lightly covered. Meanwhile, prepare baking sheets and boiling water. For water, prepare 3 quarts water with 3 tbsp sugar and 1 tbsp baking soda. Grease baking sheets and cover with cornmeal. When ready to boil, preheat oven to 425. Bring water to boil. Boil 4 bagels at a time for 5-6 minutes, flipping halfway. Drain briefly on towel before placing on baking sheet. If desired, brush on egg yolk/ water mixture and sprinkle toppings such as coarse salt, sesame seeds, etc. Bake until crusty, 25-30 minutes.
