Whole wheat pancakes that are made light and fluffy with applesauce.

Recipe Ingredients for Whole Wheat Applesauce Pancakes

2 1/2 cups whole wheat pastry flour
4 tsp baking powder
1/2 tsp salt
4 tsp sugar
1/2 cup applesauce
3/4 cup whole milk
2 eggs
1/2 cup water
2 tbsp canola oil

Recipe Directions for Whole Wheat Applesauce Pancakes

  1. Mix together dry ingredients in a large bowl.

  2. In a medium Pyrex measuring cup, mix together applesauce, milk, eggs and oil. Add only enough water to make 2 cups worth of fluid.

  3. Make a well in the middle of the dry ingredients, and add wet ingredients all at once. Stir just until moistened (there will still be lumps).

  4. Cook on a frying pan at medium heat.

  5. Makes about 2 dozen pancakes.
