These are a whole wheat alternative to our family recipe that also substitutes honey for processed sugar and eliminates the butter.

Recipe Ingredients for Whole Wheat Applesauce Mini-Muffins

1 1/2 cups honey
2 eggs
2 teaspoons baking soda
1 tsp. vanilla
24 oz. unsweetened applesauce
2 cups whole wheat flour
2 cups all-purpose flour
1 1/2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves

Recipe Directions for Whole Wheat Applesauce Mini-Muffins

Stir Soda and Vanilla into the Applesauce. Add the eggs and beat. Stir in the honey. Combine flour and spices. In a mixing bowl alternate wet and dry ingredients until all ingredients are smoothly incorporated. Spoon into greased mini-muffin pans. Bake at 400 degrees for 7 - 10 minutes.
