Whole Wheat Apple Zucchini Muffins

Recipe Ingredients for Whole Wheat Apple Zucchini Muffins

1 1/4 cups wheat flour
1 cup bulgur
1/3 cup brown sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp cinnamon
1 cup evaporated milk
2 egg whites
2 tbsp canola oil
1 apple (peeled & shredded)
1/2 zucchini (peeled & shredded)

Recipe Directions for Whole Wheat Apple Zucchini Muffins

  1. Preheat oven to 375.

  2. Mix dry ingredients and set aside.

  3. Combine milk, egg whites, and oil. Add to dry ingredients and stir until most. Stir in apple and zucchini.

  4. Spray muffin cups with non-stick spray. Spoon 1/4 cup batter in each up.

  5. Bake for 18-20 minutes or until toothpick inserted into center comes out clean.
