Whole Wheat Apple Cinnamon Pecan Waffles

Recipe Ingredients for Whole Wheat Apple Cinnamon Pecan Waffles

2 eggs, separated
2 c. skim milk
2 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. olive oil
2 apples, shredded
1 tsp. cinnamon
1/2 c. pecans

Recipe Directions for Whole Wheat Apple Cinnamon Pecan Waffles

Separate eggs. Beat egg whites until firm and set aside. Beat egg yolks. Add milk and beat well. Add dry ingredients and mix. Peel, core and shred two apples. Add apples, cinnamon, and oil and mix well. Fold in the egg whites and then fold in the pecans. Preheat waffle iron and then spoon batter into waffle iron until desired color.
