i used a 1/4 measuring cup to scoop out pancakes and they are a good size and it now makes 10!!!!!! and with half the calories. one is pretty filling and the size is good. i didn't have cinnamon, and i think that i would add it into the recipe not on top of the pancake so that it bakes into it. but they were really good and tasted great!!!!

Recipe Ingredients for whole wheat apple cinnamon pancakes

1 1/2 cups oatmeal, uncooked
2 cups buttermilk (or 2 cups milk plus 2 teaspoons vinegar)
3 egg whites (or 2 whole eggs)
1 cup whole wheat flour
2 tablespoons brown sugar
2 teaspoons baking soda
1/4 teaspoon vanilla
1 apple, peeled and chopped

Recipe Directions for whole wheat apple cinnamon pancakes

  1. Mix oatmeal, buttermilk and egg. Let stand 30 minutes to overnight, refrigerated.

  2. Add remaining ingredients, stirring batter JUST until dry ingredients are moistened. Bake on lightly oiled hot griddle, turning when bubbles start to form on top. (Griddle is correct temperature when water sprinkled on it sizzles and disappears almost instantly.)

  3. Sprinkle top liberally with cinnamon. Serve with real maple syrup and butter.
