A deliciously well rounded frittata. Filled with tons of healthy ingredients, and just enough cheese to keep you happy :)

Recipe Ingredients for A whole lotta frittata

2 medium potatoes
4 egg whites
2 eggs
1 cup spinach
1/3 cup non-fat milk
1/2 cup shredded cheddar cheese
1/2 red bell pepper
1/2 green bell pepper
1/2 onion
1/2 pound cooked ground turkey
1 tsp olive oil

Recipe Directions for A whole lotta frittata

  1. Makes 4 servings (or two really large servings)

  2. Grease pan with olive oil and place cut up potatoes on low heat to cook. Cover and let cook until tender but firm.

  3. Put in cut up onions and bell peppers, cook on low heat until onions begin to carmelize.

  4. Add the spinach and cook until slightly wilted.

  5. Add the ground turkey (MUST be pre-cooked)

  6. Mix the milk and eggs and egg whites in a bowl, then add to the pan and let simmer until cooked through.

  7. Place cheddar cheese on top and take off heat, cover to let cheese melt.

  8. Serve and enjoy :)
