Recipe Ingredients for Whole Grain Tuna Nicoise Salad

8 oz green beans, diced
8 oz Whole Grain Noodle Style Pasta
2 cups Solid White Tuna in Water
1 cup grape tomatoes
1/3 cup nicoise olives, pitted
2 tbs red onion
2 tbs. olive oil
1 tbs red wine vinegar
1 tbs balsamic vinegar
2 tsp anchovy paste
2 hard boiled eggs
2 tbs basil

Recipe Directions for Whole Grain Tuna Nicoise Salad

  1. Cook pasta according to package, no salt.

  2. Meanwhile make dressing. Add olive oil and vinegars, along with anchovy paste. Blend.

  3. Add beans, diced to cooked pasta, drain tuna and add to pasta. Add in tomatoes, onions, olives to pasta. Toss over the dressing, and garnish with quartered hard boiled egg and any fresh herbs you have on hand. About 2.25 cups per serving.
