Original recipe called for blueberries, but we didn't have any

Recipe Ingredients for Whole Grain Strawberry Banana Muffins

1 1/3 cup whole wheat flour
2/3 cup oats
3 tsp Baking Powder
1/2 cup brown sugar
1 egg
1 cup skim milk
1/2 cup unsweetened applesauce
1 cup strawberries
1 tsp vanilla
1 banana

Recipe Directions for Whole Grain Strawberry Banana Muffins

  1. Mix dry ingredients in mixing bowl - reserve 1/4 cup of flour and mix with blueberries to add last.

  2. Mix together egg, milk, melted butter

  3. Pour over flour mixture and mix gently.

  4. Don't over beat - just until flour is wet

  5. Add blueberry mixture.

  6. Spoon into muffin cups and bake at 400 for about 15 minutes.

  9. The best muffins ever!!! I substituted applesauce for butter and added 1 tsp vanilla, 1/2 cup extra blueberries (I used the little wild variety) and a mashed ripe banana....

  10. Excellent whole grain goodness! I also substituted 1/2 cup of brown sugar for the splenda (I'm not fond of artificial sweeteners), and 1 tsp of vanilla.
