Recipe Ingredients for Whole Grain Spinach Muffins

1.5 cup Flour
8 tbsp Yellow Corn Meal
2.5 tsp Baking Powder
0.5 tsp Pepper, Black
4 tbsp Lemon Peel
1 large (5" long) Pepper, Banana
0.5 cup, chopped Onions
0.25 cup, chopped Carrots
3 oz Spinach
1 large Egg, Whole
1 cup Milk, Nonfat, Fluid
0.25 cup Applesauce
0.062 cup Lemon Juice

Recipe Directions for Whole Grain Spinach Muffins

  1. Preheat oven to 400F.

  2. Grease muffin tin with fat free cooking spray.

  3. Mix flour, corn meal, baking powder, and black pepper in a large bowl.

  4. Finely chop the lemon peel, banana pepper, spinach, onion, and carrot. Mix each of these into the dry mixture so that each piece is completely coated with the mixture.

  5. Mix together the egg, milk, applesauce, and lemon juice.

  6. Add the wet mixture to the dry mixture. Fold just until combined.

  7. Scoop batter into muffin tins. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove muffins from oven, allow to cool for 5 minutes.
