Whole grain sourdough (the first ingredient is really the 1/4 cup sourdough starter).

Recipe Ingredients for Whole Grain Sourdough

3/16 cup whole wheat flour
2 cups whole wheat flour
7/8 cup rye flour
2 cups bread flour
1 3/4 cup spelt flour
13 g (scant tablespoon) salt

Recipe Directions for Whole Grain Sourdough

  1. Mix 7/8 cup water, 1/2 cup sourdough starter, and 2 cups whole wheat flour. Let the mixture sit out at room temperature for 12 hours.

  2. Add 1 1/4 cup water, the rye flour, the bread flour, the spelt flour, and the salt. Knead, place in a plastic covered bowl and refrigerate for 24 hours.

  3. Form a round loaf and let sit out for 5 hours.

  4. Bake at 485F for 40-45 minutes.
