Whole Grain Pancakes Recipe

Rustic, flavorful, and unusually light-textured for a whole grain pancake. Very good with fresh fruit, no need for syrup, or with a tablespoon or so of Greek yogurt, plain or with crushed berries or a little jam stirred in.

Recipe Ingredients for Whole Grain Pancakes

1/2 cup Whole Wheat Pastry Flour
1/2 cup Cake Flour or All Purpose Flour
2 tbs Sugar
2 tbs Baking Powder
1/4 tsp Salt
2 tbs Grapeseed Oil
1 cups Quick Oats
2 cups Low-Fat Buttermilk or Kifer
1 Egg, separated
2 Egg Whites
1 tsp Grapeseed Oil (to oil griddle)

Recipe Directions for Whole Grain Pancakes

  1. Combine dry ingredients except oats, sift twice.

  2. Work in oil with a fork or pastry blender until well combined.

  3. Add buttermilk or kifer (preferred) and egg yolk.

  4. Beat egg whites until soft peaks form; fold into batter.

  5. Bake on a hot, lightly oiled griddle or cast iron skillet until bubbles form and edges look dry, then turn over and cook other side until golden brown.

  6. Note: Check first pancake to ensure center is done. If not, reduce heat to cook more slowly.
