Yummy fluffy pancakes with corn meal and whole wheat flour. These are the best! If you make them credit Lillian Miller who was my great grandma and one of the sweetest women to ever grace the planet.

Recipe Ingredients for Whole Grain Pancakes

1/2 cup corn meal
1 1/2 cups whole wheat flour
2 eggs
2 T baking powder
1/2 cup sugar
1 t vanilla
1 t cinnamon
1 1/2 cups soy milk
1/2 cups of water (if needed to make batter)
2 T Smart Balance oil

Recipe Directions for Whole Grain Pancakes

  1. Mix the corn meal, whole wheat flour, baking powder, cinnamon, and sugar. Add the eggs, vanilla, and soy milk. Mix into a batter. Add water if you need to make it thinner to make pancakes because some flour is dryer than other flour.

  2. Put the oil in a non-stick frying pan or skillet. Heat the frying pan until sprinkles of water will dance on it. Drop spoonfuls of the batter onto the skillet to make pancakes. Fry until bubbles appear along the edges of the pancakes. Flip and brown on the other side.

  3. YUM! YUM! YUM! Makes about 12 bigger pancakes or a whole bunch of dollar size ones. These are also good warmed later in the toaster.
