Classic and Quick Linguini and Clam Sauce with a Healthy Twist

Recipe Ingredients for Whole Grain Linguine n Clam Sauce

6 1/2 oz Clams
1 tbsp chopped Shallots
2 clove Garlic
20 3/10 grams Olive Oil
1 1/2 tbsp Olives, Ripe, Canned (Small-extra Large)
1/2 box Whole Grain Linguine
1 oz Romano

Recipe Directions for Whole Grain Linguine n Clam Sauce

  1. Boil pasta according to instructions

  2. In a skillet, heat olive oil; sauté shallots and garlic taking care not to burn the garlic.

  3. Add olives and clams to shallot and garlic mixture and heat. You may add some white wine to keep from burning. Be sure to reserve the clam juice on the side for the next step.

  4. When pasta is done, drain in a colander. While the pasta is draining, add the clam juice to the skillet and bring return to a simmer. When the clam juice starts to boil, add the pasta to the skillet and turn off heat. Mix until the starch on the pasta thickens the clam juice, which should happen almost immediately. If not, you can keep the heat on the skillet until thickened.

  5. Plate and top with cheese. Serve immediately!!!
