Moist sweet whole grain muffins that won't eat up a whole days' calorie allowance!

Recipe Ingredients for Whole Grain & Fruit Muffins

1 1/2 cup Shredded Carrots
1 1/2 cup dry Old Fashioned Quaker Oats
1 1/2 cup Whole Wheat Flour
2 tsp Baking Soda
2 tsp Cream of Tartar
2 tsp Cinnamon, Ground
1/2 tsp Nutmeg, Ground
1/2 cup Honey, Strained Or Extracted
1/4 cup Pineapple Juice
1 tsp Vanilla Extract
3/4 cup Applesauce
8 oz Crushed Pineapple
1 large Egg, Whole
0.33 cup Craisins, Sweetened Dried Cranberries
1/4 cup Chopped Pecans

Recipe Directions for Whole Grain & Fruit Muffins

  1. Preheat oven to 325 degrees. Coat 18 slots in 2 muffin pans with non-stick cooking spray

  2. Squeeze carrots in cotton lint-free towel to remove excess moisture.

  3. In a mixing bowl, combine oats, flour, baking soda, cream of tartar, and spices.

  4. In a separate bowl, combine honey, applesauce, pineapple, pineapple juice, cranberries & vanilla. Stir in beaten egg. (If you use canned crushed pineapple, use the juice from the can instead of buying separately. If you use fresh pineapple, capture 1/4 cup juice from the fresh fruit.)

  5. Combine wet mixture into dry along with carrots, stir only until combined.

  6. Portion out into 18 muffins in the prepared tins.

  7. Combine flax seed meal and chopped pecans. Top each muffin with 1/2 tsp of the mixture.

  8. Bake for 18 minutes.
