Makes 6 loaves, 6 serving each. I used whole grain fine flour, ground from soft pastry wheat. Amount of flour can be increased or decreased depending on humidity and the type of grain used. Easy and fast. The recipe can be cut in half twice for one large round flat. Italian seasoning can be added for extra flavor.

Recipe Ingredients for Whole Grain Focaccia

6 cups water (lukewarm)
2 tbsp olive oil
2 tbsp honey
2 tbsp salt (Real Salt)
4 tbsp yeast (rapid rise)
14 cups whole wheat flour (soft wheat)

Recipe Directions for Whole Grain Focaccia

  1. If time permits, mix water, flour, honey and yeast and let mixture sponge about an hour to enhance flavor.

  2. Add oil, salt and enough flour to make a stiff bread dough.

  3. Knead on low speed of mixer for 6-8 minutes.

  4. Form into loaves, pizza crust, or focaccia.

  5. Let rise. If desired, brush top with egg white, which bakes it brown.

  6. Bake in a hot 400 degree, preheated oven until hollow sounding, about 18-24 minutes.

  7. Serve with Italian Butter. Put a small amount of dry Italian butter mixture in dipping bowl. Add olive oil. Refill as needed.
